In professional mixology, using an N2O whipper to create "airs" or "foams" is a common advanced technique. The principle involves charging a liquid containing stabilizers (like soy lecithin, gelatin) and flavoring agents with gas to form a stable foam. You can easily master this at home.
Basic Formula Principles:
Liquid Base: About 200ml (e.g., fruit juice, liqueur, syrup, tea).
Stabilizer: 5-10ml (e.g., honey, a small amount of egg white, or a specialized foaming agent).

General Steps:
Mix all liquid ingredients and pour into the whipper → Load and charge with 1 N2O → Shake up and down 10-15 times → Let rest for 1 minute → Invert the whipper and gently dispense the foam on top of your prepared cocktail.
